Dal Bati Churma – Rajasthani cuisine
Dal Bati Churma is the most commonly available dish across Rajasthan. Its Made with whole wheat flour that is roasted over firewood. The bati is hard round-shaped wheat balls that are crispy on the outside and soft inside. The dal is made up of spices and multiple varieties of lentils that are soaked in water overnight. And then pressure cooked, followed by Tempering with Spices and Red Chilies. The churma is made up of crushed Bati generously dipped in ghee and mixed with sugar or jaggery. The baked Bati, dal and jaggery mixed churma all three combined to make a complete meal for a Rajasthani. A trip to Rajasthan is incomplete without trying this classic and royal dish.

Gatte Ki Sabzi
A traditional and a speciality of Rajasthan, Gatte Ki Sabzi is fried or steamed gram flour (besan) balls cooked in curd gravy with lots of Indian spices, finished in a rich tangy flavour. Gatte ki Sabzi is eaten with Indian flatbread (roti) and or with Steamed Rice.

Laal Maas is essentially a meat curry made with a yoghurt-based sauce and a variety of hot spices, like red Mathania chillies. The Rajasthani Kadhi is a spicy and tangy yoghurt mixed, further thickened with gram flour. Besan Pakoras dipped in the Kadhi, enhances the flavours of the Rajasthani Kadhi.
