Dal Baati Churma – Rajasthani cuisine

Dal Baati Churma is the most commonly available dish across Rajasthan. Its Made with whole wheat flour that is roasted over firewood. The baati is hard round-shaped wheat balls that are crispy on the outside and soft inside. The dal is made up of spices and multiple varieties of lentils that are soaked in water overnight. And then pressure cooked, followed by Tempering with Spices and Red Chilies. The churma is made up of crushed Bati generously dipped in ghee and mixed with sugar or jaggery. The baked Bati, dal and jaggery mixed churma all three combined to make a complete meal for a Rajasthani. A trip to Rajasthan is incomplete without trying this classic and royal dish.



Gatte Ki Sabzi

A traditional and a speciality of Rajasthan, Gatte Ki Sabzi is fried or steamed gram flour (besan) balls cooked in curd gravy with lots of Indian spices, finished in a rich tangy flavour. Gatte ki Sabzi is eaten with Indian flatbread (roti) and or with Steamed Rice.



Laal Maas

The most talked-about dish, in Rajasthan, is Touted as one of the best non-vegetarian specialities of Rajasthan. Laal Maas is essentially a meat curry made with a yoghurt-based sauce and a variety of hot spices, like red Mathania chillies. The red chillies give it a rich colour and fiery taste, though the spice level can be changed as per the choices. This can be eaten with Pullav Rice or Indian flatbread. 



Ker Sangri

Ker Sangri is a kind of pickle that is a combination of Ker, which is a zesty wildberry, and Sangri is the dried beans of Khejri stir-fried together with a dash of local spices. This dish may not look enticing, but it bursts with refreshing flavours that make it a must-try dish. It can be savoured with Flatbread made of bajra (millet) or wheat.



Ghevar

Ghevar is a cake-like dessert that blends flour, milk and ghee, and is then soaked in sugar syrup, followed by a blast of dry fruits such as Almonds, Pistachio, Cashews and Saffron sprinkled on top. It is prepared in different types of mould and available in different shapes, sizes and varieties.

Any festival or celebration in Rajasthan is incomplete without this signature dessert. It is usually served with rabri and nuts.



Rajasthani Kadhi

In India, there are numerous variations of Kadhi in most of the states, each of them has a different effect on the palate. The Rajasthani Kadhi is a spicy and tangy yoghurt mixed, further thickened with gram flour. Besan Pakoras dipped in the Kadhi, enhances the flavours of the Rajasthani Kadhi. It’s as delicious as it is tempered with Mustard Seeds and Asofoetida for more fragrance and often served with rice.


Kachori

Kachori is a fried puff patisserie that can be found throughout India. In fact, there are numerous variations of this snack, and the Rajasthani variants top the charts – Onion kachori and Mawa kachori which is sweet. Pyaaz kachori is stuffed with onions, spices and potatoes, best accompanied with sweet and sour tamarind Chutney. 



Mawa kachori Jaipur

The Mawa kachori has khoya (Reduced Milk) and dried fruits and soaked in sugar syrup. Once you’ve eaten these Lip-smacking Rajasthani kachoris, you’ll keep reaching out for more.Mawa Kachori is a delicious dessert with lots of nuts and dried fruits infused within it making it unique.



Mirchi Vada 

Michi Vada is spicy fritters sold in almost all over India, but no one does it better than Jodhpur, Rajasthan. It has a filling of potato and Big Size Green Chilli, served hot with mint and tomato sauce. It’s a perfect combination of Hot Spicy and sweet flavours.



Safed Maas

Meat Dish, which is also a traditional dish of Rajasthan cooked in White Gravy, consists of Creame, milk, curd and cashew paste, and mixed mild spices and dried fruits. The fruits flavour up the dish to a different level of sumptuousness.



Bhuna Kukda or Roasted Chicken

Thoroughly marinated Chicken with local spices and then tender cooked, resulting in a mouth-watering dish that will leave you craving for a second helping. Topped with fresh coriander, and eaten with Indian flatbread. 



Mohan Thaal

Mohan Thaal is a fudge, with the basic ingredient (gram flour) (besan) infused with cardamom, and topped with dry fruits. The chewy texture, and a sweet grainy taste, make your sweet tooth crave for it. It is popular in both Rajasthan and Gujarat.
